So we have the WORST luck with cars. WORST EVER, people.
We get in a lot of accidents – the real kicker is maybe 10% of those accidents are our fault. The rest are from other people backing into us without leaving notes, construction barriers flying into our front and side windows from the crazy West Jordan wind, teenagers slamming into our bumper and totaling our vehicle, and college students slamming into the side rear of our car from ice (Utah in the winter is a suck fest driving-wise). These all actually happened – and our poor car has taken a serious beating.
Unfortunately for us, a few of these accidents are cases where we’re having to pursue the companies and people who are responsible because they won’t pay-out. It’s super-frustrating, but they should realize that when you hit the car of an attorney, and leave tracks and serious damage, you’re going to get pasted to the wall with some serious evidence against you.
Why? Well, the first thing I do when an accident happens is take as many pictures as I can. Pictures are worth a thousand words – and sometimes a thousand dollars. For the meantime, we’re driving a car right now with a bashed in door (it doesn’t close all the way and the window is stuck – so a cold draft blows in through the cracks whenever we drive the car.). It’s some serious high-class rolling. So if you see us – please soak in our awesomeness. If you’d like to pay our $1,000 deductible, please find our little car, and finish it off. Just make sure none of us are in the car, mmkay? Oh, and leave a note with your insurance info, please.

This sandwich is a perfect Sunday no-stress-no-work-but-big-taste kind of meal. It’s fantastic. It melts all over the place when that mozzarella gets freaky with the meat and veggies. And how hard was it to make? With the exception of the knife stuff, my 2 year old could make this. Just chop it up, toss it in, leave it alone for 5 hours, and BAM – dinner is easily served. If you have a crazy day next week, put this on the menu. You’ll be grateful to come home to something amazing to fill your lovely little bellies with without any effort at all.
Slow Cooker Chicken Philly Sandwiches
makes 4-5 sandwiches
2 T unsalted butter
1 large yellow onion, sliced
2 green bell peppers, stemmed, seeded, and sliced
2-3 raw boneless, skinless, chicken breasts, sliced
2 T McCormick Montreal Steak Seasoning
kosher salt & freshly ground pepper
8-10 slices mozzarella cheese
1. Turn slow cooker to low heat with butter in the bottom. When butter melts, add in sliced veggies.
2. Toss chicken with steak seasonings, salt & pepper, then add to slow cooker on top of veggies.
3. Cover with a tight-fitting lid and cook on low for 5 hours.
4. Add a couple slices of cheese to each hoagie, and top with chicken, then veggies. The chicken should fall apart by now – and the flavors should melt right together on that blessed sandwich. oh man.
